Mom's Pasta Salad

My mom is a working mom. And she doesn't really enjoy cooking and baking like I do. But I can say...every single night we had a real home-cooked dinner. She didn't do take-out, and we rarely went to restaurants on week nights. So every night she'd come home from work and fix dinner...usually a meat, vegetable, and either pasta/rice/potato.

This dish is one of her easy fixes. I have no clue how it originated, but I can remember her fixing it as far back as my memory can reach. She usually prepared it on a weekend afternoon, so it had adequate time to chill. Then we'd eat on it all weekend...lunch, dinner, just nibbles....didn't matter. It was one the first things I asked her how to make when I was out on my own. Super simple, but so so yummy. And just perfect for the scorching southeast summers.

Pasta, any shape or size (I use corkscrews, just because mom always did)
1 large or 2 small cans of ham, chopped
1 can of peas, drained (I always use early young sweet peas)
1 can diced pineapple, drained
mayo to taste
mustard to taste (I sometimes use honey mustard)

1. Cook and drain pasta.
2. Add all the rest of the goodies, and mix well.
3. Chill and enjoy :-)

Ham and peas go well together and ham and pineapple go well together. Combining all three in a cool pasta salad sounds good! Thanks for sharing with Presto Pasta Nights!
